Charred Carrots with Sesame and Honey
Add a burst of color and flavor to your holiday table with this recipe from Chef Brett! These perfectly caramelized carrots are drizzled with honey, sprinkled with sesame seeds, and are not only a delight to eat, but also a nutritious addition to your plate.

Serves 4-6 people
- 2-3 lbs whole carrots, washed (small rainbow carrots work well)
- 3-4 tablespoons extra virgin olive oil
- Kosher or sea salt and cracked black pepper, to taste
- 2 sprigs fresh thyme
- 3-4 tablespoons good-quality honey
- 2 tablespoons toasted sesame seeds (black and white)
Preheat your oven to broil. Adjust the oven rack to the middle position—close enough for the broiler to caramelize the carrots, but not too close to burn them.
Place the carrots in a large cast-iron skillet or on a medium-sized sheet tray. The skillet or tray should be large enough to allow all the carrots to touch the bottom.
Drizzle the carrots with olive oil, and season with salt, pepper, and thyme. Toss to coat evenly.
Place the skillet or tray on the oven rack and broil. Check every 5–7 minutes, shaking the pan or turning the carrots to ensure even cooking. Repeat until the carrots are tender and caramelized. If the thyme begins to burn, remove it.
Transfer the carrots to a serving platter. Drizzle with honey and a little more olive oil. Sprinkle with toasted sesame seeds and adjust seasoning with additional salt and pepper, if needed.
