No-Bake Chocolate Chip Cookies

This no-bake cookie recipe from Project Angel Heart Executive Sous Chef Summer Polson combines chocolate, peanut butter, and crispy cereal for a delicious bite that’s chewy and chocolatey. No oven required, making them perfect as summer temps soar!
Makes 2 dozen cookies

- 2 teaspoons dry milk solids (or dry milk powder, available in most grocery stores, optional)
- 1 cup quick oats
- 1/2 cup Rice Krispies (or other puffed rice cereal)
- 1 cup white sugar
- 1 1/2 tablespoons unsweetened cocoa powder
- 1/4 cup whole milk
- 1/4 cup unsalted butter
- 1/2 teaspoon vanilla extract
- Kosher salt, to taste
- 1/4 cup peanut butter
- 1/4 cup dark chocolate chips
Line two cookie sheets with parchment paper and set aside.
In a large bowl, combine the dry milk solids (if using), oats, and Rice Krispies.
In a medium saucepan over medium heat, combine sugar, cocoa powder, milk, and butter. Bring to a boil, stirring occasionally. Once boiling, set a timer and continue boiling for 3 minutes.
Remove from heat and stir in vanilla, salt, peanut butter, and chocolate chips until smooth.
Pour the hot mixture over the dry ingredients and quickly stir to combine using a rubber spatula.
Working quickly, scoop the mixture onto prepared cookie sheets. Flatten slightly if needed for shape. Cookies will set as they cool. Enjoy!
