Matzo Meal Polenta

This is one of the sides in our Hanukkah meal. Matzo meal is a traditional food eaten during the Hanukkah celebration. Unlike other breads, matzo does not contain any fat and is lower in salt content, making it a simple meal component that is appropriate for most dietary preferences.

Matzo Meal Polenta

Makes 4-6 servings

  • 4 cups water
  • 1/2 cup polenta
  • 1/2 cup matzo meal
  • Kosher salt and cracked pepper

Bring water to a boil in a large saucepan.

Pour polenta and matzo meal slowly into boiling water, whisking constantly until there are no lumps.

Reduce heat to low and simmer, whisking often, until polenta starts to thicken, about 5 minutes. Polenta mixture should still be slightly loose. Cover and cook for 15 minutes, whisking every few minutes. When polenta is too thick to whisk, stir with a wooden spoon. Polenta is done when texture is creamy, and the individual grains are tender.

Season with salt and pepper to taste.
